Mineral, Iconic, Timeless — Dauvissat Chablis

Few domaines capture the soul of Chablis with the clarity and authority of René & Vincent Dauvissat. Revered by collectors and sommeliers alike, this historic estate crafts wines that define the very essence of Kimmeridgian terroir — precise, mineral-driven, and built to age gracefully for decades.
Dauvissat’s style is unmistakable. Fermented and aged primarily in older oak, the wines emphasize purity over flash, allowing the stony soils of Chablis to shine through. The result is Chardonnay of remarkable tension and depth, where vibrant citrus, green orchard fruit, oyster shell, and chalky salinity weave together in seamless balance.
The village Chablis delivers striking freshness and energy, making it an exceptional introduction to the house style. Moving up the range, the Premier Crus — including La Forest and Séchet — bring added concentration and layered complexity, combining crystalline fruit with pronounced minerality and a long, resonant finish.
At the pinnacle sit the legendary Grand Crus, particularly Les Clos, where power meets finesse. These wines are profound yet disciplined, capable of evolving beautifully over 15–20 years, revealing notes of honeyed citrus, toasted hazelnut, and wet stone while maintaining their signature precision.

VM 95 (1/2020): The 2017 Chablis La Forest 1er Cru is a standout and one of the wines that brings together so many of the best elements of the Dauvissat house style. A Chablis of marvelous contrasts, the Forest is at once light on its feet and also packed with notable intensity. At the same time, the Forest is mysterious and not ready to show all of its cards yet. There is so much to look forward to. The Forest emerges from eight parcels spread across 3.7 hectares, Dauvissat's largest holding. I imagine the diversity of these micro-parcels goes a long way in giving the wine dimension and complexity. Antonio Galloni. BH 93 (8/2021): A cool and airy combination offers up notes of algae, lemon rind and wet stone where the latter element can also be found on the sleek, intense and energetic middle weight plus flavors that are a bit finer than usual, all wrapped in a bone dry and aggressively mineral-driven finale. A classic La Forest that should continue to develop over the next 4 to 7 years. In a word, excellent. Try from 2025+. |

| BH 93 (10/2020): Like the Montée de Tonnerre this is overtly floral in character on the lightly spiced nose that displays additional aromas of mineral reduction, iodine, lemon peel and pear. There is a really lovely sense of verve suffusing the powerful yet reasonably refined larger-scaled flavors that culminate in an almost chewy bone-dry finish thanks to the abundance of sappy dry extract. This muscular effort isn't as refined as the Montée de Tonnerre but it's just as complex and persistent. Drink 2030+. |

VM 93+ (8/2024): The 2022 Chablis Fôrets 1er Cru was promising from barrel last year. Now, in bottle, it has held on to that complex, mineral-led bouquet, with hints of chamomile in the background. The palate is very well balanced with a silver thread of acidity, like the Montée de Tonnerre. Quite understated towards the finish, suggesting that this will benefit from a few years in bottle. Plenty of energy, but patience required. Neal Martin. BH 93 (10/2024): There is ample citrus influence suffusing the nose that could be from nowhere else but Chablis with its array of seashore, algae and oyster shell scents. The caressing but notably denser and more powerful larger-bodied flavors coat the palate while retaining an attractive texture on the strikingly persistent finish that is shaped by bright acidity. This can't match the MdT for refinement but it is presently more complex and should age just as well. |

WA 94 (8/2019): A bottling that regularly excels chez Dauvissat, the 2017 Chablis 1er Cru Séchet opens in the glass with delicate aromas of citrus peel, grapefruit, crisp green apples and white flowers, with only subtle hints of the oyster shell to come. On the palate, it's medium to full-bodied, satiny and concentrated, with a deep and tight-knit core, striking tension and a searingly mineral finish. Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it's typically much chalkier and more tensile than the other climats that make up Vaillons. VM 92 (1/2020): The 2017 Chablis Sechet 1er Cru is soft and open-knit, not to mention incredibly inviting. Dried pear, almond, spice and savory notes all grace this lovely, absolutely charming Chablis. Pretty floral overtones add to its considerable allure. This is one of the wines in this range that will drink best with minimal cellaring. (Drink between 2020-2032). Antonio Galloni. BH 91 (10/2019): An impressively broad-ranging nose offers up notes of mineral reduction, wet chalk, sea breeze, citrus and dried apple. There is good richness yet also good refinement to the generously proportioned flavors that exude a fine bead of minerality on the beautifully persistent finish. This too is very good and should age effortlessly. (Drink starting 2027). |

| BH 91 (10/2020): This too possesses fine Chablis typicity with its array of sea breeze and iodine along with the hallmark citrus scents of a classic Séchet. There is a wonderful sense of underlying tension to the mineral-driven middle weight flavors that exhibit slightly better depth and length on the well-balanced, crisp and chiseled finale. This is dry to the point of engendering a touch of youthful austerity and thus a wine that will need at least a few years of patience. (Drink starting 2026). |

VM 94 (1/2020): The 2017 Chablis Vaillons 1er Cru is bright, precise and beautifully sculpted. Petrol, graphite and white flowers give the Vaillons an exotic feel that is really beguiling. Pliant and also chiseled, the Vaillons impressed with its alluring beauty and exceptional balance. Although the 2017 is going to need a number of years to be at its very finest, it is also really impressive today. (Drink between 2022-2037). Antonio Galloni. WA 93 (8/2019): Aromas of fresh peach, white flowers and mint introduce the 2017 Chablis 1er Cru Vaillons, the most expressive and outgoing wine in Dauvissat's 2017 collection. On the palate, it's medium to full-bodied, satiny and supple, with an elegantly textural attack, a layered core and a saline finish. If any readers intend to drink their Dauvissat premiers crus in the flush of youth, this is the bottling they should seek out. BH 92 (8/2024): A lightly exotic nose consists of pure white orchard fruit and muscat nuances that display background hints of floral character, mineral reduction, matchstick and seaweed. The rich, round, succulent and concentrated middle weight flavors possess an opulent but balanced finish where the minerality really comes to the fore. While still young, though by no means primary, it's not so tightly wound as to be unapproachable now even if it's clear that there is more development potential on tap. Lovely. (Drink starting 2027). |

VM 97+ (7/2012): Bright pale yellow. Precise, high-pitched nose offers lemon peel, crushed stone, white pepper and metallic minerality; more expressive today than the Preuses. Wonderfully pure, silky and incisive but youthfully closed on the palate, showing great concentration of bracing grapefruit and lemon fruit (tonic youth!). Not an overly powerful style but the spectacularly long finish leaves the retronasal passage quivering with juniper, floral and resin nuances. BH 94-96 (10/2011): (from 7 different parcels of 48 year old vines that total 1.7 ha). Compared to the Preuses, this is more obviously floral and stonier as well with its cool, pure and equally classic green fruit and oyster shell nose. The powerful medium-bodied flavors exude plenty of dry extract that confers a sappy texture upon the strikingly complex mid-palate though the saline suffused cuts-like-a-knife finish is chiseled, explosive and massively long. This is textbook Les Clos with size, power and explosive energy and offers a remarkable contrast to the Zen-like Preuses where its harmony and understatement are its primary strengths. One can admire both but either way, they are both impressive as hell. Drink 2022+. Don't miss! WA 96 (8/2012): Veins of saline minerality support expressive fruit in the 2010 Chablis Les Clos. White peaches, slate, smoke, crushed rocks and salt are all quite vivid in the glass. It is hard to resist the Clos today, as the fruit is so silky and delineated, yet at the same time it is quite clear the wine has the potential to evolve beautifully in bottle for many, many years. The 2010 is all about silkiness and precision. Today, it has a little less overt ripeness and weight next to the Preuses. Anticipated maturity: 2015+. |
